Happy Chicken Pie

Happy Chicken Pie. Probably the 50th attempts of pie that I made.

Iknow.... I promised that I want to share this Happy Chicken Pie recipe on last weekend.
but lots of things going on and I wasn't able to have a zen moment to wrote.

Happy Chicken Pie
(1 to 2 hours ++, served 3 persons who ate a lot, about d= about < 30cm pie mold )

Pie Crust :
  • 2 cups of all purposed flour
  • 2 sticks of unsalted butter. Diced. put inside the fridge until you need it.
In Indonesia, we didn't sell butter on sticks. so, if you try to convert the measurements into grams you'll find that A stick of butter was more or less same about the size of your Index finger. So, what I did was prepared some dices of butter and use it as much as I need it.

  • a teaspoon of salt
  • a teaspoon of sugar
  • 2 or 3 tablespoons of water.
  • a bit of baking powder
Tips : you have to be quick doing pie dough OR don't work it inside a hot temperature room.
The butter will melt fast.
BUT, when I cook it with my son, we would never ever be fast :) so, what I did is to put the dough back to fridge after I covered it with plastic wrap for 1 hour.

how make the Pie Crust :
  • mix everything!!! make it FUN. Fold the batter several times... the dough must be slightly able to shaped...  until you can feel the butter slightly gone (melt)... and after all mixed slightly well... give some tablespoons of COLD water. one by one until you can make a heavy yellow dough... like a not-so-smooth play doh.
I didn't use any rolling pin because I can't find mine. Maybe left at our old apartment :( . I used fork. And for the cover we decided do it with cookie cutter.

Ta Daa!
  • Cover your pie mold / pie bakeware/ ramekin/ cupcakes cup or pyrex with the dough. the thickness was about 5mm. Yes... you can use rolling pin and do it GRACEFULLY like the one that they have in a TV shows. But used my spoon and forks to do it, baby and it's fine ! After I cover the mold, I pinch the dough surface with forks... because I saw somewhere said that it won't make the dough cracks.
  • Wrap it well, put back into fridges. 30 minutes will be enough. while you wait for the butter to back into solid, let's prepare the pie filling.
  • to bake, pre heat the oven about 200°C for like 10 minutes. put inside the Pie Crust dough into the oven don't forget to remove the wrap :)). Bake it for about 30 minutes.

What you'll need for Chicken Pie filling :

  • obviously CHICKEN. I used 1 chicken breast. chopped so that my son will has no idea to protest about a thing.
  • 1 big carrots. diced.
  • 2 small potato. diced.
  • 5 big Champignons. diced. not to small because it will shrunks.
  • Cillantro super chopped. optional. as much as you like it. Cillantro and milk maybe a lil bit weird but I'm okay with it. some Asian cooking use coconut milk + cillantro.
  • 1 onions
  • 1 cup of milk. I used UHT milk.
  • 1/2 cup of cooking cream. optional. I used it because I felt it made the taste creamier.
  • 1 teaspoon of dijon mustard. optional. for tangy flavor. I saw it on Jamie Olliver's show.
  • 1 teaspoon of multi purpose flour for thickening.
  • salt and pepper of course
Tips : I'm not recommend you to use frozen vegetables because... first.. the nutritions... second.. they cooked to fast. sometimes they tend to be overcooked... third.. they have a weird synthetic flavor that I able to tasted. I dislike it but still I used it sometimes.

how to do it... here we go :
  • stir the chopped onions, potato, and carrots with canola oil. The color of the onion will become transparents but the important is the potato / carrots soften. I used low heat. it took times but the flavour of potato & carrots will be taste better.
tips : everything grow under the soil will be best cooked with small heat.

  • after the potato & carrots become cooked. you almost can squish it but  don't. put inside the champignons. stir it for a while. Dijon, Salt, and Pepper in. I make it a little bit salty because it probably diluted into milk. Make sure everything is cooked because the next step should not done too long.
  • okay...here we go. prepare the milk, cooking cream,  mustard, and flour near you.
  • pour the milk step by step while you stirring the pan in one direction. still in low heat. do it until it bubbling a little bit.
  • put inside the cooking cream. stir well.still in one direction.
  • took a pinch of flour.. fold everything until it's thickening just like in my photos.
  • put inside the cillantro (optional). not to long.
  • done.

Now we have everything and the last step is to combined everything and baked it again.
ALWAYS Pre Heat the oven 200°C for like 10 minutes.
put inside the Happy Chicken Pie and bake it  about 20 minutes until the top browning well.

best served hot.
